Spiced Lamb and Veggie Bake
30 mins prepServes 4
A delicious and flavorful spiced lamb and vegetable bake, perfect for iftar, featuring tender lamb marinated with Middle Eastern spices and baked with a colorful assortment of vegetables until caramelized.
In a large baking tray, whisk together the olive oil, sweet red pepper paste, paprika, smoked paprika, Aleppo pepper, oregano, and dried mint until smooth.
Add the lamb pieces and whole garlic cloves to the tray and toss well to coat in the marinade. Cover and refrigerate for at least 1 hour (up to 4 hours) to allow the flavors to develop.
Preheat the oven to 350F. After marinating, season the lamb and garlic with salt and black pepper and mix well.
Place the lamb in the center of the tray. Arrange the vegetables side by side around the meat in separate sections. Tuck the bay leaves between the vegetables. Drizzle lightly with olive oil if needed and season the vegetables with a little salt, pepper, and oregano.
Cover the tray tightly with parchment paper and then foil. Bake for about 1 hour.
Increase the oven temperature to 425F. Carefully remove the foil and parchment, spoon the pan juices over the meat and vegetables, and return to the oven uncovered for 20–25 minutes, until everything is tender and beautifully caramelized.
Serve warm with fresh bread, yogurt, or a simple salad on the side.
