Pomegranate Glazed Chicken Salad

For the chicken, marinate the chicken breast with salt, white pepper, fresh garlic, 2 tablespoons hot honey, 2 tablespoons pomegranate molasses, and 1 tablespoon olive oil. Allow it to marinate for at least 1 hour. Grill the chicken until the internal temperature reaches 165F. For the salad, combine butter lettuce, cherry tomatoes, Persian cucumbers, parsley, mint, pomegranate seeds, and pistachios. For the dressing, mix equal parts olive oil and lemon juice (e.g., 2 tablespoons each) with 2 tablespoons pomegranate molasses and salt to taste. Assemble the salad, add the grilled chicken, toss with the dressing, and enjoy!
