Lentil Soup🧡 Ingredients: 1 tablespoon Olive oil 1 onion, diced 2 cups red lentils 3 small carrots diced 8 cups filtered water or 4 cups water and 4 cups bone broth I used @bonafideprovisions 1 teaspoon @betterthanbouillon 1 teaspoon salt 1 teaspoon black pepper 1 teaspoon cumin 1/2-1 teaspoon turmeric 2 Lemons Caramelized onions Toasted pita chips Instructions: Start by soaking the lentils for 10-15 mins while preparing the other ingredients. Set aside. In a large pot, saute onions and carrots with olive oil until onions are translucent and the carrots soften slightly. Wash and drain lentils and add them to the pot. Saute with the onions and carrots for 2-3 minutes and season with salt, pepper, bullion, cumin, and turmeric. Add boiling filtered water or bone broth and bring to a boil. Let simmer on medium/low for about 35 minutes. Make sure to stir occasionally to avoid the lentils burning or sticking to the pot. Juice 2 lemons (or however much lemon you like) and add to the soup at the end. Using an emersion blender, blend until smooth and creamy. If the soup is too thick add more water or stock. Taste and adjust the seasonings to your preference. Add caramelized onions, toasted pita chips and serve with lemon wedges, on side. Enjoy!
