These delicious and healthy oatmeal cups are a perfect little treat, made with banana, peanut butter, cinnamon, honey, and rolled oats. Baked until golden, they are then filled with Greek yogurt and berries for a satisfying snack or breakfast.
Preheat your oven to 350°F (175°C).
In a bowl, combine the mashed banana, peanut butter, a dash of cinnamon, 3 tablespoons of honey or maple syrup, and 1 3/4 cups of rolled oats. Mix until all ingredients are well incorporated.
Spoon the mixture into a muffin tin, pressing it down to create little cups. You should be able to get 10-12 cups from this batter.
Bake the oatmeal cups at 350°F (175°C) for 15-20 minutes, or until lightly golden.
Remove from the oven and allow to cool completely in the muffin tin before gently removing them.
Once cooled, fill the oatmeal cups with your desired toppings. The recipe suggests Greek yogurt and berries. Drizzle with some extra honey if you like, and enjoy!
