These green muffins are a great way to incorporate more vegetables into your kids' diets and are always a hit! They're made with oat flour, bananas, spinach, and chocolate chips.
Start by preheating the oven to 350F. Spray your muffin tin with non stick spray and set aside. Combine the dry ingredients (oat flour, baking powder, baking soda, cinnamon) and mix until incorporated. Blend the bananas, egg, apple sauce, maple syrup, and spinach in a high speed blender. Add the wet mixture to the dry ingredients and fold in the chocolate chips. Add the batter to muffin tins and top with a few extra chocolate chips on top. Bake for 20-25 mins depending on your oven and the size of your muffins. Allow to cool and enjoy!
