Chocolate Chip Banana Muffins
15 mins prepServes 10
An oldie but a goodie, these chocolate chip banana muffins are a family favorite, perfect for using overly ripe bananas. This recipe is simple and requires only a few ingredients.
Preheat oven to 350ºF. Grease muffin pan with oil.
In a large bowl, add almond butter and egg. Whisk together until combined. Add in mashed banana and combine until smooth.
Add in almond flour and baking soda, cinnamon, nutmeg, pumpkin pie spice, and salt. Use a large spatula to gently combine until no lumps are present in the batter. Gently fold in dark chocolate chips.
Evenly distribute batter into 9-12 muffin cups, about 2/3 of the way full. Top muffin batter with extra chocolate chips to make it pretty!
Bake muffins for 12-18 minutes, or until an inserted toothpick comes out clean. Muffins will rise and cracks should appear when done. Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely. Enjoy!
