Coconut and chocolate! It’s a match make in heaven! These Almond Joy Cups are so delicious and super easy to make! I love making these for a little sweet treat to enjoy after dinner. In a small bowl, to make the coconut layer, add 1 cup unsweetened shredded coconut, 1/2 cup melted coconut butter, 2 tablespoons maple syrup, 1 teaspoon vanilla extract, and 1/4 teaspoon salt. Mix well then press into mini cupcake liners. Firmly press each cup with a whole almond. Freeze for 30 minutes or until firm and solid. Melt dark chocolate chips. Remove coconut layer from the freezer and add enough chocolate to fill the cupcake liner 3/4 way full. Freeze for an additional 30 minutes or until chocolate sets. Enjoy immediately and store in the freezer for up to a month.
