Quick and easy air fryer chicken taquitos, perfect for a weeknight meal. Featuring seasoned chicken and a creamy pepper jack cheese mixture, all rolled into tortillas and air-fried to crispy perfection.
For the chicken: Mix chicken breasts with 2 teaspoons salt, 2 teaspoons cumin, 1 tablespoon garlic powder, 2 teaspoons paprika, and 1 tablespoon chilis in adobo sauce. Allow to marinate for at least 30 minutes. On medium-high heat, grill the chicken breasts until cooked through. Once cooked, shred the chicken and set aside.
For the chicken/cheese mixture: In a bowl, combine 2 cups shredded pepper jack cheese, 1/2 cup softened cream cheese, the shredded chicken, and 1/4 cup chilies in adobo sauce. Mix together thoroughly and set aside.
Assemble the taquitos: Grab your tortilla of choice, stuff it with the chicken/cheese mixture, and roll it up tightly. Repeat for all taquitos. Spray the rolled taquitos lightly with avocado oil.
Air fry: Place the taquitos in an air fryer and cook for 15-17 minutes at 400°F (200°C), or until golden and crispy. Enjoy with pico de gallo, guacamole, and extra cheese.
